Auntie's Banana Bread

This recipe comes directly from Janell’s Aunt who was a head chef at a local restaurant.

Ingredients:

2 cups flour

1 ½ tsp baking powder

1 tsp baking soda

1 tsp salt

1 ⅓ cups sugar

¾ cups olive oil

¼ cup milk

3 large ripe bananas (as brown as they can be)

1 egg

1 tsp vanilla

Directions:

  1. Turn oven on and set to 350 degrees F

  2. Lightly coat 2 bread loaf pans with oil

  3. In large bowl combine: flour, baking powder, baking soda, salt and sugar

  4. Once combined, add olive oil and milk, stir

  5. In small bowl mash all 3 bananas and mix with egg and vanilla 

  6. Next, add banana mixture to other ingredients in the large bowl

  7. Bake at 350 degrees for 35-45 minutes, or until you can poke the bread with a toothpick and it comes out clean.
